Spring Salmon Salad ~ Forårssalat med Laks

This recipe is appropriate for a Low Carb Diet

 

 

 

 

10 minutes to prepare, 10 minutes till it's done.

10 minutter i køkkenet, 10 minutter til det er færdigt.

4 servings ~ 4 personer

Server med groft brød, som tilbehør til en hovedret, eller alene.

Serve with whole grain bread, as a side dish, or alone.

For low carb purposes we like it with Julian #1 Smart Carb bread.
It is a dense, hearty bread that makes a filling piece of toast.
It has just 1 net gram of carbs per slice with a whopping 12 grams of fiber.

 

 

 

 

  • 1 head raddicchio, sliced thin

  • 4 Belgian endive, sliced

  • 8 radishes, sliced thin

  • ¼ cup cilantro leaves

  • ¼ - ½ cup vinaigrette dressing

  • 3 oz. flaked smoked salmon in bits

  • 1 firm avocado, quartered and sliced

  • ½ cup crumbled feta cheese

  • 1 hoved raddicchio i tynde strimler

  • 4 hoveder julesalat i strimler

  • 8 radiser i tynde skiver

  • 2 dl. friske korianderblade

  • 2 - 4 dl. olie-eddike dressing

  • 100 g røget laks i flager, revet i små stykker

  • 1 fast avocado skåret i kvarter og derefter skiver

  • 2 dl. smuldret fetaost

 

 

Toss raddicchio, endive, radishes and cilantro with the vinaigrette.
Add salmon, avocado, and feta, and mix into salad gently.

Bland raddicchio, julesalat, radiser, og korianderblade med dressingen.
Kom laks, avocado og fetaost i, og vend salaten forsigtigt.
